This takes the cake!

Okay, so I’ve been on a mission to come up with a gluten free cake mix or recipe that actually works since Kaylee’s 4th birthday is rapidly approaching. I’ve tried so many and they bombed. It was mushy or grainy or chewy. You name it! The other night after the gym, I walked over to Fresh & Easy since it was next door to see if they had ANYTHING that I could try out. They did have a mix and surprisingly it was only $1.49 so I picked up a few figuring it must not be great since it was so cheap. The common Gluten free mixes are upwards of $3.99 to $5.99 a box. This one included a frosting mix too. What a bonus! So, I baked some up today while the kids were napping. It turned out great. Not one problem as I had with the others. This cake is moist and chocolately. If I didn’t know any better I would not know it was gluten free. It’s delish! Quite possibly one of the best cakes I’ve had. The frosting is okay but a bit too sweet for me.Sof'ella Gluten Free Chocolate Cake Mix

I was talking with my sister on the phone about it and told her how much I picked them up for. She asked what the expiration date was because I should go back and pick up a few more boxes. Good question I said. I flipped it over and the expiration date was today! Not that I was worried it would be bad or anything. It’s sealed flours and stuff which I know remains fresh for much longer than it says. Anyhow, I went back to the store to pick up a few more and just figured I’d ask the Manager if there was a discount since they were expiring today. He said sure and gave me 50% off, for a whopping total of .75 cents each! I picked up 29. I had to run home and tell my hand twin how cheap chinese I was beening and have him laugh at how crazy I was to buy so many cakes, but it was such a deal. Good cake is hard to come by and cheap cake too!

Family Visit to Whole Foods

It’s been awhile since I’ve posted things and I’m sure I’ve missed a lot plus there is a lot that I couldn’t post. LOL.

So, we went on a trip to Whole Foods the other day since it’s not exactly close to the house, we had to plan it out. William had the kids in the cart and was wheeling them around while I looked for what I needed so we could get in and out of there quickly. I get back to the cart with my items and find a bag in the cart that just doesn’t belong (picture below). How can he find something unhealthy in a health food store? I guess if there is anything unhealthy Will can find it!

Just thinking of my kids

When I think of how much I love my kids I also think of how they are both SO different. Kyle who is a natural born adventurer usually has that gleam in his eye that you know he’s up to no good. He would never think to ask before doing something. It’s only his affection and love for everything that saves his hyde on occassion.  Kaylee, who is so sensitive is also a natural born pleaser from declaring when we get to the dinner table, “here’s my knife, I’m not allowed to have it”  and asking if she’s allowed before doing anything, to reciting every rule she has to her younger brother.

I love you guys!

Who’s anniversary is it anyway?

Okay, so William this is for you…  On any given day I may get an instant message from my hubby not to say hello or that he’s thinking of me, it’s “143 food! or what’s for dinner?”  From passing off, “don’t you remember we talked about it, I told you!”  My automatic response, “was I awake or asleep?”  William “you were asleep but you said ok!”  So why should OUR anniversary be any different? It’s late and he wants his back scratched, no problem, I scratch for awhile and stop, “What? That’s it? Who’s anniversary is it anyway?”  After 6 years I gotta love him, cause if I didn’t it would just drive me crazy!  Well, sometimes it does…

I know it’s not said enough so I’m saying it now, we are so very fortunate to be surrounded by such terrific friends who love our children (maybe even more than our own family).  I guess that’s what I’m trying to say…our friends ARE our family!  We are truly blessed.

Am I missing something?

Okay, so sometimes I really question what William thinks about in a day. Today, it was “in retrospect Maggie should have been named with a K, KMag.” Then he goes into how maybe Kaylee & Kyle should have started with an M to match the dog, “Maylee & Myle.” These are the things we IM about…sad. It didn’t end there either. He came home and was asking Kyle if he would like to be called Myle. As usually not much response from Kyle since he has trouble saying his own name, anything would be an improvement. William comes to Kaylee’s room where I’m getting her ready for bed and tells her her name is Maylee, she responds with a grumpy face “my name is Kaylee!” William, “Oh okay, calm down, we were just trying something out!” Kaylee, “No!”

Caught a…. Skunk?

Skunk

Let me explain a bit first why we are even trapping anything…. We have a huge cat problem in our neighborhood. Since we have moved in six years ago, we have had a litter of kittens born in our backyard each year! We trapped a few years ago and it’s become a problem again especially after they keep killing off my flowers in the front of the house AND since I’ve been having to pick up their stinky poop along with it!

So, I wake up Sunday morning and go check the trap only to rub my eyes and check again what I’m seeing. I’m trying not to laugh and I go wake Will up to tell him he has to come check the trap. He lets Maggie outside and I think we are done for. She rushes the trap and then the skunk is ready to spray but Will is able to call her away before anything happens. I call animal control to let them know we have a surprise for them and we are off to have fun for the day.

Trip to Rose Hills

Just a lazy Sunday morning at the Law house.  Nothing too exciting.  We took a trip to Rose Hills to visit Ah Ma.  Kaylee picked purple Tulips, Ah Ma’s favorite color.  The kids had fun running around the grounds.  Afterward, we had a nice lunch at Taste of Texas, where Kyle enjoyed listening for the trains and watching as they went by and where we ALL ate way too much.

I couldn’t make this stuff up if I wanted to!

Just like the title says, I couldn’t make this stuff up if I wanted to.

I wake up at the crack of dawn just to take Kaylee to her ballet class in Diamond Bar which starts at 8:00 am.  It’s refreshing to see a room full of 3 year olds who think they are doing a great job at ballet but look so uncoordinated and even fall over several times trying to do the moves.  Graceful ballerinas they are not but cute as a button they are.

So, after a day of rearranging our schedule so that people could come see our house that’s for sale and for them to be so rude as to not show up for the appointment and not even call, I’m on the phone with one that is trying to schedule for tomorrow and Kaylee runs up and yells “Ma Ma, Kyle pooped on the table.”  I’m trying to be as professional as possible and hurry off the phone.  I wonder what these people must be thinking.  I hope they are thinking Kyle must be the name of their dog.  Anyhow, I set down the phone and run out to see what the crisis is.  I find Kyle bottomless, a diaper in the corner and a pile of poop on the coffee table out in the living room.  Mind you at this moment it is around 15 after 5 and we have someone coming to see the house that said they would be there between 5 and 5:30.  So, I think no one will believe this and I better take a picture.  The camera has no battery left.  I manage to catch the lil pooper and get him to the bathroom to wipe his butt.  He’s giggling like crazy and thinks this is hilarious.  The battery charged for 1 min and I take the picture, clean up the table and Lysol like crazy!

Fun at the Farm…

Today I took the kids to Cal Poly Pomona to go Strawberry picking with a few of their friends. Who knew there was so much country in the city? It was fabulous and they had a blast. Afterwards, we had a nice picnic lunch at the park. I think we may make this a yearly outing.
