This takes the cake!

Okay, so I’ve been on a mission to come up with a gluten free cake mix or recipe that actually works since Kaylee’s 4th birthday is rapidly approaching. I’ve tried so many and they bombed. It was mushy or grainy or chewy. You name it! The other night after the gym, I walked over to Fresh & Easy since it was next door to see if they had ANYTHING that I could try out. They did have a mix and surprisingly it was only $1.49 so I picked up a few figuring it must not be great since it was so cheap. The common Gluten free mixes are upwards of $3.99 to $5.99 a box. This one included a frosting mix too. What a bonus! So, I baked some up today while the kids were napping. It turned out great. Not one problem as I had with the others. This cake is moist and chocolately. If I didn’t know any better I would not know it was gluten free. It’s delish! Quite possibly one of the best cakes I’ve had. I was talking with my sister on the phone about it and told her how much I picked them up for. She asked what the expiration date was because I should go back and pick up a few more boxes. Good question I said. I flipped it over and the expiration date was today! Not that I was worried it would be bad or anything. It’s sealed flours and stuff which I know remains fresh for much longer than it says. Anyhow, I went back to the store to pick up a few more and just figured I’d ask the Manager if there was a discount since they were expiring today. He said sure and gave me 50% off, for a whopping total of .75 cents each! I picked up 29. I had to run home and tell my hand twin how cheap chinese I was beening and have him laugh at how crazy I was to buy so many cakes, but it was such a deal. Good cake is hard to come by and cheap cake too!
